Warm Sweet Onion & Pepper Relish

This sweet, hot relish made with Vidalia onions and bell peppers is a must for all your summer cookout menus - delicious with grilled chicken, beef or pork. The topping is perfect for any meal and combines sour, sweet, and spice into a delicious relish that no one will be able to get enough of.

Ingredients
  • 1 Tbsp of olive oil
  • 1 medium sweet onion, diced
  • ¼ cup of red bell pepper, diced
  • ¼ cup of green bell pepper, diced
  • 2 Tbsp of fresh parsley, chopped
  • 1 Tbsp of lime juice
  • 1 tsp of fresh mint, chopped
  • ½ tsp of honey
  • ¼ tsp of salt
  • ¼ tsp of cayenne pepper
Instructions
  1. In a large skillet, heat oil over medium-high heat.
  2. Sauté onion and peppers until wilted slightly and onions become translucent.
  3. Stir in cayenne pepper, parsley, mint, lime juice, honey and salt. Serve warm.
