Warm Sweet Onion & Pepper Relish
This sweet, hot relish made with Vidalia onions and bell peppers is a must for all your summer cookout menus - delicious with grilled chicken, beef or pork. The topping is perfect for any meal and combines sour, sweet, and spice into a delicious relish that no one will be able to get enough of.
Ingredients
- 1 Tbsp of olive oil
- 1 medium sweet onion, diced
- ¼ cup of red bell pepper, diced
- ¼ cup of green bell pepper, diced
- 2 Tbsp of fresh parsley, chopped
- 1 Tbsp of lime juice
- 1 tsp of fresh mint, chopped
- ½ tsp of honey
- ¼ tsp of salt
- ¼ tsp of cayenne pepper
Instructions
- In a large skillet, heat oil over medium-high heat.
- Sauté onion and peppers until wilted slightly and onions become translucent.
- Stir in cayenne pepper, parsley, mint, lime juice, honey and salt. Serve warm.
