Braised Rice Soubise with Sweet Onions

A traditional French braised rice and onion dish, soubise gets a sweet makeover with sweet onions. This soubise can even be made in advance and reheated. Recipe Courtesy of Chef and The Fatman.

Ingredients
  • ½ cup of Arborio (risotto) rice
  • 2 medium sweet onions, sliced
  • 2 Tbsp of salt
  • ½ Tbsp of pepper
  • 4 Tbsp of butter
  • 1 Tbsp of dried thyme
  • 1 Tbsp of dried oregano
  • fresh parsley, finely chopped for garnish
Instructions
  1. In a large pot, combine water and 1½ Tbsp salt and bring water to a complete and full boil.
  2. Drop rice in boiling water and boil for five minutes. Drain immediately.
  3. Preheat oven to 300°F (150°C).
  4. In an oven safe casserole dish over medium heat, melt butter until it begins to foam.
  5. Add onions and coat fully in butter. Add rice and remaining ingredients, except parsley.
  6. Bake covered for 1 hour, stirring ingredients occasionally.
  7. Sprinkle with parsley and serve warm.
