Quick Pickled RealSweet Rubies

- 1 large RealSweet® Rubies® sweet red onion, sliced very thin
- ½ cup of rice vinegar
- ¼ cup of hot water
- 1½ Tbsp of honey
- 1 ½ tsp of salt
- 10 peppercorns
- 4 to 6 whole cloves
- 1 garlic clove, smashed
- pinch of red pepper flakes
1. Bring a medium-sized pot of water to a boil.
2. Meanwhile, add ¼ cup hot water to a mason jar, then stir in the honey until dissolved. Add rice vinegar, salt, peppercorns, cloves, garlic, and red pepper flakes to the mason jar. Set aside.
3. Add sliced onions to boiling water. Cook for 60 seconds then strain. Carefully add hot onions to the mason jar. Cover and let sit for at least an hour, or overnight for best results.
