Pickled Vegetables with Sweet Onions
Pickled vegetables are an easy, delicious appetizer! Very little prep time required to turn these mixed vegetables into a sweet, tangy treat. Add them to our sweet onion charcuterie board for an appetizer sure to impress any guest.
Ingredients
- 1½ cups of broccoli florets
- 1½ cups of cauliflower florets
- 2 large sweet onions, sliced
- 1 cup of yellow squash, sliced
- ¾ cup of carrots, sliced
- 2 cup of water, boiling
- 1 cup of sugar
- ½ cup of cider vinegar
- 2 tsp of celery seed
- 1 (14 oz) can of artichoke hearts, drained & quartered
Instructions
- Combine broccoli, cauliflower, onions, squash and carrots in a large glass bowl and set aside.
- Combine water, sugar and vinegar, stirring to dissolve sugar.
- Pour hot mixture over vegetables.
- Cover and refrigerate for several hours before serving.
