Grilled Chicken, Tomato and Sweet Onion Salad
This salad will steal the show this summer! With the unbeatable flavors of grilled chicken, bacon, avocado, and of course our Vidalia sweet onions, you'll be coming back for more. With an easy prep, this salad is perfect for on the go or just relaxing at home. Its sure to give you a mid-day boost in energy.
Ingredients
- 1 lb boneless, skinless chicken breast halves
- 1 package (6 oz) of spring salad mix
- 1 medium sweet onion, sliced
- ½ cup of grape tomatoes
- 1 avocado, peeled and cubed
- 2 slices of cooked bacon, crumbled
- ¼ cup of blue cheese crumbles
- blue cheese dressing, amount as desired
- olive oil
- salt and pepper, to taste
Instructions
- Heat grill to medium-high heat.
- Brush chicken with oil and season with salt and pepper to taste.
- Grill 8 to 12 minutes or until no longer pink in the center, turning once.
- Cool chicken enough to handle, then slice into thin strips.
- In a large bowl, combine all ingredients and toss with blue cheese dressing, amount as desired.
