Deviled Egg Pasta Salad with RealSweet Rubies

Ingredients
  • 8 ounces small pasta, like elbows
  • 1/2 cup mayo
  • 1 tablespoon pickle juice
  • 1 tablespoon Dijon mustard
  • 6 hard-boiled eggs, peeled and diced
  • 1 cup RealSweet Rubies, chopped
  • ⅓ cup chopped pickles
  • 1 teaspoon garlic powder
  • ½ teaspoon paprika
  • salt and pepper to taste
  • green onions, sliced, for garnish, optional
Instructions
  1. Cook pasta according to package instructions.
  2. Drain and rinse in cold water.
  3. Add cooked pasta to a large bowl.
  4. Add pickle juice, mayo, dijon mustard, diced eggs, red onion, pickles, garlic powder, paprika to the pasta. Stir well. Add salt and pepper if desired.
  5. Chill under ready to serve.
  6. Before serving, sprinkle with sliced green onions.
