Deviled Egg Pasta Salad with RealSweet Rubies
Ingredients
- 8 ounces small pasta, like elbows
- 1/2 cup mayo
- 1 tablespoon pickle juice
- 1 tablespoon Dijon mustard
- 6 hard-boiled eggs, peeled and diced
- 1 cup RealSweet Rubies, chopped
- ⅓ cup chopped pickles
- 1 teaspoon garlic powder
- ½ teaspoon paprika
- salt and pepper to taste
- green onions, sliced, for garnish, optional
Instructions
- Cook pasta according to package instructions.
- Drain and rinse in cold water.
- Add cooked pasta to a large bowl.
- Add pickle juice, mayo, dijon mustard, diced eggs, red onion, pickles, garlic powder, paprika to the pasta. Stir well. Add salt and pepper if desired.
- Chill under ready to serve.
- Before serving, sprinkle with sliced green onions.
