Crescent City Shrimp & Crab Dip with Sweet Onions

Ingredients
- 1 tablespoon unsalted butter
- ½ cup ham, diced
- 1 cup sweet onion, chopped
- ½ cup red bell pepper, chopped
- 1 tablespoon dry sherry
- 1 (8-ounce) package cream cheese, room temperature
- ¼ cup mayonnaise
- ½ cup green onion, chopped
- 1 ½ tablespoon hot sauce
- 1 tablespoon lemon juice
- 2 teaspoons Creole seasoning
- 1 (8-ounce) container lump or claw crabmeat, picked free of shell
- ½ pound cooked peeled and deveined fresh shrimp, chopped
- ½ cup freshly grated Parmesan cheese
- Tortilla chips, to serve
Instructions
- Preheat oven to 350°.
- In a small cast-iron skillet, melt butter over medium heat. Add sweet onions, and cook, stirring occasionally, until golden brown, 8 to 10 minutes.
- Add bell pepper, and cook, stirring occasionally, until softened, about 5 to 7 minutes.
- Stir in sherry.
- Add ham. Cook, stirring occasionally, 3 minutes.
- Remove from heat.
- Add cream cheese and mayonnaise, stir until smooth.
- Add in chopped green onion, hot sauce, lemon juice, and Creole seasoning. Stir until well combined.
- Gently stir in crab, shrimp, and Parmesan.
- Bake until golden brown and bubbly, 20 to 25 minutes. Serve with chips.
- Garnish with sliced green onion and extra shrimp if desired.
