Crescent City Shrimp & Crab Dip with Sweet Onions

Ingredients
  • 1 tablespoon unsalted butter
  • ½ cup ham, diced
  • 1 cup sweet onion, chopped
  • ½ cup red bell pepper, chopped
  • 1 tablespoon dry sherry
  • 1 (8-ounce) package cream cheese, room temperature
  • ¼ cup mayonnaise
  • ½ cup green onion, chopped
  • 1 ½ tablespoon hot sauce
  • 1 tablespoon lemon juice
  • 2 teaspoons Creole seasoning
  • 1 (8-ounce) container lump or claw crabmeat, picked free of shell
  • ½ pound cooked peeled and deveined fresh shrimp, chopped
  • ½ cup freshly grated Parmesan cheese
  • Tortilla chips, to serve
Instructions
  1. Preheat oven to 350°.
  2. In a small cast-iron skillet, melt butter over medium heat. Add sweet onions, and cook, stirring occasionally, until golden brown, 8 to 10 minutes.
  3. Add bell pepper, and cook, stirring occasionally, until softened, about 5 to 7 minutes.
  4. Stir in sherry.
  5. Add ham. Cook, stirring occasionally, 3 minutes.
  6. Remove from heat.
  7. Add cream cheese and mayonnaise, stir until smooth.
  8. Add in chopped green onion, hot sauce, lemon juice, and Creole seasoning. Stir until well combined.
  9. Gently stir in crab, shrimp, and Parmesan.
  10. Bake until golden brown and bubbly, 20 to 25 minutes. Serve with chips.
  11. Garnish with sliced green onion and extra shrimp if desired.
