Balsamic Roasted RealSweet Rubies
Ingredients
For the onions:
- 3-4 RealSweet® Rubies® (approx. 1 1/2 lbs)
- 2 tablespoons extra virgin olive oil
- 2 tablespoons balsamic vinegar
- 1 tablespoon plus 1 teaspoon chopped fresh oregano
- 1/8 teaspoon salt
- 1/8 teaspoon ground black pepper
For the glaze:
- 1 tablespoon balsamic vinegar
- 1 teaspoon Dijon mustard
- 2 tablespoons extra virgin olive oil
- 1/8 teaspoon salt
- 1/8 teaspoon ground black pepper
Instructions
- Preheat the oven to 400F.
- Slice off any roots from the onions, leaving the firm root centers intact.
- Cut the onions in half from tip to root.
- Peel off the skins and all papery layers.
- Cut each half into 4 wedges, slicing through the root so that the wedges stay intact.
- pray a 1 to 1 1/2 quart baking dish (9-inch round or oval, 8-inch square) with cooking spray.
- Pack the onions as tightly into the prepared dish.
- Drizzle on the olive oil and balsamic vinegar.
- Sprinkle on oregano, salt, pepper evenly over the top. Reserve some oregano for serving.
- Don’t stir or mix! Cover the baking dish with foil and bake for 30 minutes.
- Remove the foil and continue to bake for an additional 30 minutes.
- While the onions are in the oven, make the glaze. In a small bowl, mix the balsamic vinegar, olive oil, dijon mustard, salt, and pepper.
- After the onions have been roasting for 30 mins uncovered, remove from the oven and pour the glaze over the onions.
- Continue cooking for another 10 minutes, or until the onions are tender.
- Sprinkle the onions with the remaining 1 teaspoon oregano before serving.
