Bacon Sweet Onion Jam with Baked Brie

Bacon, sweet onions, and Brie cheese? You can't go wrong with that combo! This delicious yet easy recipe is the perfect dish to bring to any party and will be the talk of the town. Recipe and photography by Jodi Danen of Create Kids Club.

Ingredients
  • 1 lb bacon
  • 2 sweet onions, sliced
  • 1 Tbsp unsalted butter
  • ¼ cup red wine vinegar
  • ¼ cup whiskey
  • ¼ cup water
  • ¼ cup brown sugar
  • 1 tsp Dijon mustard
  • balsamic vinegar for drizzling (such as espresso-flavored balsamic vinegar or fig)
  • 1 wheel of brie with the top crust sliced off
Instructions
  1. Preheat the oven to 350°F (177°C).
  2. In a dutch oven or cast iron skillet, cook bacon until crisp then remove from pan, reserving 2 tablespoons of bacon grease. Discard the rest of the grease.
  3. To the drippings in the pan, add the reserved bacon grease and butter. Heat over medium heat.
  4. Add red wine vinegar, whiskey, water, brown sugar, and dijon mustard. Stir and bring to a simmer.
  5. Stir in onions and cover. Cook on medium for 15 minutes. Remove cover, stir and continue to simmer for 30 minutes.
  6. Carefully transfer ⅔ of the bacon jam into a food processor or blender, puree until just chopped. Stir in the other ⅓ of the jam.
  7. Place brie into a medium sized oven serving dish with edges (cheese will spread after cutting into it). Top with bacon jam and bake for 15 minutes.
  8. Drizzle generously with balsamic vinegar.
  9. Serve immediately with crackers or bread.
