Antipasto Salad with RealSweet Rubies

- 1 head of romaine lettuce, chopped
- ½ small RealSweet® Rubies® sweet red onion, sliced
- 1 cup of cherry tomatoes, sliced
- ½ cup of salami, chopped
- ½ cup of kalamata olives
- ¼ cup of shredded parmesan cheese
- pepperoncini peppers
- ¼ cup of canola oil
- 1 ½ Tbsp of red wine vinegar
- 1 tsp of stone ground mustard
- ½ tsp of sugar
- ½ tsp of Italian seasoning
- ¼ tsp of salt
- ⅛ tsp of pepper
- ⅛ tsp of granulated garlic
1. To a large bowl add lettuce, sweet red onion, cherry tomatoes, salami, kalamata olives, parmesan and pepperoncini peppers.
2. In a small bowl whisk together the oil, vinegar, mustard, sugar, Italian seasoning, salt, pepper, and granulated garlic. Pour over salad just before serving.
